Making 150 USD of classic almond cakes at home but for 20 USD #2/36
Recipe for making marzipan petit fours (70 pieces about 1000 grams in total)
Ingredients marzipan dough:
750 grams of marzipan (use marzipan with about 63% almonds)
200 grams of white sugar (this is the amount of sugar that a pastry chef would
normally add to the marzipan dough, but I prefer not to add sugar to make the
petit fours less sweet and healthier)
4 eggs (only use the egg white)
Ingredients petit fours toppings:
A glass of Amarena cherries (the oldest brand is Amarena Fabbri but no-name
brands can be just as good for nearly half the price)
Roasted Tuscan Hazelnuts (Italian)
Walnuts (preferable from France, Grenoble. Note that walnuts you buy with shell
on and peel yourself are by far the tastiest compared to buying peeled walnuts)
Skinned almonds
Instructions:
Brake marzipan up in small pieces and drop them in the mixer bowl for your
stand mixer. Add sugar if you like your petit fours to be sweeter otherwise
skip that. Add egg white and start mixing. Keep adding egg white until your
marzipan dough has a soft texture that makes it suited to spray through the
nozzle of your pastry bag. The dough is finished when thoroughly mixed.
Stuff the marzipan dough into your pastry bag and use it to create small
marzipan petit fours on a sheet of baking paper. Top off your petit fours with
Amarena cherries or nuts of your liking. Bake in oven for about 20 minutes at
200 degrees Celsius (392 degrees Fahrenheit) or until they are slightly browned/golden.
Done.
