Scandinavian lunch dish: Spice herring in Sherry tomato sauce #22/57
Recipe – Spice herring in Sherry tomato sauce
Ingredients: (enough for 12 half slices of rye bread)
- 540 grams of spice marinated herring (old style matured salt brine herring; drained weight)
- 250 grams of tomato puree (98.6% tomato and 1.4% salt)
- 40 grams of tomato ketchup
- 100 grams of capers
- 100 grams of red onion
- Spanish Sherry vinegar
- Sugar
Instructions:
- Prepare the red onion by cutting it up in rings. Set aside the prettiest rings for garnishing and chuck up the rest in small pieces for use in the dressing. Put the latter in mixer bowl for dressing.
- Prepared the capers. Drain the water from the capers by squishing them as hard as you can in your hand. Set aside some capers for garnishing. The rest is put in the mixer bowl for the dressing.
- Mix tomato puree, tomato ketchup, cut onions, capers using a spoon.
- Spice the dressing to your likings with Spanish Sherry vinegar and sugar.
- Prepare the herring by squishing it gently between your thumb and your index finger and pulling it through so the marinading brine is mostly removed. Cut the herring in pieces of about 1 inch (2.5 cm). Set aside the prettiest pieces for garnishing.
- Make the serving dish by flooring it with herring pieces and cover them with the tomato dressing. On top of that another layer of herring pieces and then apply tomato dressing. The top layer should use the prettiest herring pieces and on top of those place the onion rings and the capers so people can see what they are eating.
- Remove any spills with a paper towel. Done.
Important observations:
The dish can be made the day before it is served. Just cover the serving dish with plastic film and store it in the refrigerator. It is important that the capers and the herring is dried up as prescribed. Otherwise, the Sherry tomato sauce will get too thin and wet.
Serving suggestions:
Herring dishes is a must have for any Scandinavian Christmas lunch. I will make more videos with other kinds of herring recipes but spice herring in Sherry tomato sauce is my absolute favorite herring recipe. It should be served on a roasted piece of rye bread with cold butter on or duck fat.
